how we know if an invoice that we send from Zuora's invoice page reached the recipient? Specifically, I am asking where a bounceback or out of office reply would go to?

The out of office email ( or any other automatic email as "Undelivered Mail Returned to Sender" ) will be sent back to the 'from to' or 'reply to' email address of the "posted invoice" email.
these 'from to' or 'reply to' addresses are configured on the tenant's Settings, under Billing -> Setup Profiles, Notifications and Email Templates -> Email Templates
