problem:
It seems Opportunity Amount gets set to 0 when a Quote is created. Is this something that Zuora always does or does something need to be tweaked with our implementation? Do we need to build something to combat this

Solution:
The reason the Opportunity Amount was set to '0' after this Quote was created , was because customer had Quote configuration setting "Update Opportunity Amount with Quote TCV" enabled.
And the Quote had all Flat fee one time charges with TCV value '0', hence becaue of the above Quote configuration setting , Opportunity Amount was set to '0'.
