Starting from ZQuote 7.x, we use salesforce standard Product2 Object for Product Catalog sync.
First, please make sure same as the custom field configured in Zuora, a field is added in the Salesforce Product2 object and values synced succesfully.
In the product selector flow you can use below filter:
Zuora Config -> Guided Product Selectors -> Guided Selling Step Name -> Select Fileterd Product Catalog -> Click on button Create New Filters
