Go to your account on top right corner and click on billing > click on Manage custom fileds

click on subscription fields > add new filed

Once New custom filed is created, it shows in list of subscriptionfileds.

You can get all the custom fields details by REST call "https://rest.apisandbox.zuora.com/v1/subscriptions/{id}"
