hi! We are adding a new product to our catalog for on-site training. We can't recognize the revenue until the training has been delivered, and I was wondering if there was a way to mark the training as "fulfilled" within Zuora. We'd like to eventually automate revenue recognition through Zuora and it would be cool if we could mark the product as fulfilled on the date the services are delivered.

Take a look at this page in the KC, specifically the second beginning with, 'Specific recognition date':
So while there's no explicit 'fulfilled' field you can distribute revenue on a specified date. If you wish you can automate this and so when the training is flagged as completed in another system that system could call Zuora's API to invoke the distribution. More on the API call is here:
