In addition, what if our Zuora Quotes package is at version 9 or earlier (pre-360+), as ours is? Will products still sync over?

We've never used 360+ (or even looked at it).

Answer: That is correct. As a part of the update, we will disable 360 Sync and power on the new version which has a new back-end/architecture but leverages the 360+ user experience.
Question: When upgrading in the PRODUCTION environment, will all items listed on the "360+ Object Enablement" page (Objects: Zuora Connector for Salesforce 360(+) and Objects: Zuora Quotes ) be selected? or just objects: Zuora Connector for Salesforce 360( + ) ?
Answer: After your tenant has been upgraded (sandbox or production), you will see all your relevant objects from both sections auto selected/checked on this page.

Customers currently using Zuora 360 sync will be upgraded in waves to Zuora's latest Salesforce CRM sync by Q2 2023. This will ensure you are on the newest version of the Salesforce connector with the latest capabilities.
We will first roll-out the update to sandbox environments giving customers enough time to test the latest changes before rolling out to production environments. We will post a similar notification once we have upgraded all sandboxes and one when we're about to start production roll-out.

How is this better?
This upgraded version brings the following improvements for customers on Zuora 360:

What is different?
Please note the following differences to your current 360 sync capabilities:

Optimized for low latency, near real-time sync in predetermined batch sizes using Salesforce SOAP API (no Bulk API support yet)

Sync reporting: All sync failures that are supported for manual retry will be posted on the 360+ retry failures page. Please make yourself familiar with this page as we will no longer post updates within the Sync History section of Zuora 360.

Email notifications are currently not supported in the new sync

Object Selection Capability: Select what data you want to sync from the 360+ Object Enablement configuration page.

Simplified product experience: With this upgrade, changed data in Zuora will be synchronized to your Salesforce org in near real-time. Thus, recurring sync and ability to configure advanced sync settings will be deprecated.
How does this impact you?
Customers will not experience any impact during the upgrade processes and will not need to do anything on their end. All the objects synced in 360 will be migrated to the new version.
